Summer Breakfast Heaven

So I shared a post today on Facebook about my new breakfast inspiration and ritual. Basically I'm using the school holidays and the less stressful, calmer and slower mornings to get a better, more nutritious, more delicious breakfast inside me. My usual cornflakes (organic at least, and with homemade oat mylk) my fall back breakfast for speed - but super dull were just not doing it for me at all. So much so that I'd often just skip breakfast all together (terrible idea btw!) or just eat a bananas or peach.
So all change. Yesterday I made up a big jar of Chia seeds with oatmilk and vanilla (so I'd have enough for a few days breakfasts), and then this morning I layered it up with fresh peach chunks, greek yoghurt and a quickly whizzed raspberry compote (again I made enough for a few days) Topped with bee pollen and coconut flakes. WOW, was that a breakfast improvement!! Super πŸ˜‹ yum. Light yet full of goodness. (My other half even asked why I was having a 'restaurant dessert' for breakfast! It looked that good! πŸ˜‚). Thinking of adding some nuts and seeds to tomorrow's experiment, and then maybe some roasted rhubarb from the garden after the raspberry compote has been used up. I'm seeing infinite possibilities here, which is great. Those cornflakes are out of here, so thankful for that!

So I wanted to share the super simple recipe with you. You can 'make it your own' and add in whatever you fancy (or have to hand, more likely for me at least!). And yea Chia seeds are not perhaps in your corner shop, and can be expensive - but Aldi and Morrisons both have reasonably priced good ones. Chia is a protein rich seed, it gives you energy without the heaviness. If you don't like the texture (its not to everyones taste), then you can whizz it in a blender to give a creamier consistency.

To make the Chia base:

  • 4 tablespoons chia seeds
  • 300 ml Milk of your choice (oat, almond, cows etc)
  • 1 teaspoon vanilla extract
  • 2 teaspoons agave nectar, runny honey or maple syrup

Raspberry Compote:

  • Some rasperries (fresh or frozen), maybe 2 handfuls
  • a squirt of agave nectar (or honey or maple syrup) to taste

Toppings and layering:

  • toasted or raw nuts
  • bee pollen
  • goji berries
  • thick yoghurt (greek  or coconut is great)
  • pumpkin, sunflower or other seeds
  • coconut flakes
  • fresh fruit cut into mouth sized chunks
  • Anything else that takes your fancy!

To make:

So it is really very simple. Embarrassingly so!

The night before combine the chia seeds, milk of choice, vanilla and sweetener. Stir well, then pop in the fridge overnight so the seeds can bloom and soften.

In the morning, put the raspberrys (fresh or frozen) with the sweetener into a smaller blender and whizz until its a puree. Erm, thats it.

Then you take a glass or a small bowl, and layer some of the chia into the bottom. Then add the others toppings/layers of your choice - the fruit chunks, yoghurt and compote. Sprinkle some pretty bits and bobs on top, then sit back and enjoy!

Any questions let me know. But as you can see its actually rather lughable simple. And super quick if you have the chia and compote in the fridge, just an assembly job. Could also easily be a quick dessert too.
